I’ve had a long standing love affair with beetroot! I love it’s beautiful deep rich red color. I love that it grows in the ground in nourished healthy soil. I love it’s strong round solid shape and it’s thick deep green and maroon leafs (which btw, make fantastic additions to your smoothie!). I love that however you choose to eat this wonderful vegetable (steamed, grated (yes it’s a bit messy but oh so yum and sweet in it’s raw state when added to salads), juiced…) it rewards your body not just with it’s earthy flavors but with an abundance of healing and nourishing properties.
